Banana Nut Bread with No Added Sugar
So, you've given up sugar, but you'd sure love a nice baked dessert. I've got one for you! I've tweaked this recipe for banana nut bread until I've heard over and over again that you cannot tell it has no added sugar and no white flour! It's easy to make, and you can serve this dessert to your family without even mentioning that it's good for them. They'll never know!

3 or 4 very ripe bananas
1/8 cup stevia
4 tbsp canola oil, plus a little more for oiling the loaf pan
1 tsp vanilla extract
1 1/2 cups sifted whole-wheat flour
1 1/2 tsp baking soda
1/4 tsp salt
3/4 cup chopped walnuts
1. Heat the oven to 350 degrees. Brush a loaf pan with oil.
2. Mash the bananas and mix with the stevia, canola oil and vanilla extract.
3. Stir together the whole wheat flour, baking soda and salt. Add the nuts.
4. Blend the two mixtures and spoon into a loaf pan. Bake for 40 minutes, or until center is set.
